Royal Guild of Goose Roasters ~ La Chaîne des Rôtisseurs
A recent evening found me with the members of The Triangle Bailliage de North Carolina of the Confrérie de La Chaîne des Rôtisseurs, an international gastronomic society founded in 1950 in Paris to revive the traditions of the royal guild of goose roasters chartered in 1248. “The Chaîne is dedicated to bringing together those who share a mutual interest in cuisine, wine, and fine dining in a spirit of camaraderie….” Who knew? Apparently, those who really know their food. Here I thought I was tricky for being a member of Triangle NACE.
I was invited to photograph the kitchen & the dinner at the Vista Restaurant @ the Washington Duke Inn. It was an fantastic meal. It was prepared under the direction of Jason Cunningham, Washington Duke Executive Chef; Don Ball, Dir of Food & Beverage and a special guest chef Walter Royal of Angus Barn & Iron Chef fame. Velimir Luksic selected great wines to be paired with each course. Food was fantastic (yes, I got to sneak a little in the kitchen) & everyone seemed to have a ton of fun.
